Natural da cidade de Rio Grande, Copstein atuou nos principais jornais e emissoras de rádio do Rio Grande do Sul. Em 1945, aos 17 anos, fixou residência em Porto Alegre, e passou a trabalhar na Rádio Farroupilha, na qual ficou até 1949.

A família, no entanto, não o apoiava. Sob pressão, teve de fazer um curso universitário. Optou pela Odontologia. Recém formado, passou a atuar em Rio Grande e, durante dez anos, trabalhou como dentista e jornalista simultaneamente.

Cerca de um ano depois, em 1950, viu o nascimento da Rádio Minuano, em Rio Grande, da qual foi o primeiro diretor artístico. Durante dez anos, se dividiu entre Rio Grande e a paixão pelas rádios, incluindo a Rádio Cultura Riograndina, na qual fazia radio-teatro, e o consultório odontológico. Em 1960, retornou à Capital Gaúcha e à Rádio Farroupilha, onde ficou até o início de 1968.

Em março de 1968, o Correio do Povo contratou Copstein como freelancer. Um mês depois, o efetivou. O jornalista trabalhou na empresa até junho de 1984. Além de repórter, exerceu os cargos de editor e de assessor da direção. No jornal, teve o poeta Mario Quintana como colega. Idealizou cadernos especiais, com capas coloridas, um marco para a época. Também editou o clássico caderno "Letras e Livros".

Após sair do jornal, em 1985, Jayme voltou para o rádio. Desta vez, assumiria um programa no horário da meia-noite às 3h na Rádio Gaúcha. O Gaúcha na Madrugada foi ao ar em 4 de fevereiro de 1985. Em uma época em que não existia internet, a interatividade se dava através de ligações telefônicas. A trilha sonora foi escolhida pelo músico Wladimir Lattuada, o operador era Glademir Menezes e a arquitetura do programa ficou a cargo de Délcio de Souza. A atração, que contava com a participação dos ouvintes, durou 19 anos.

O crescimento da audiência fez com que fosse preciso encontrar uma alternativa para ouvintes que criavam situações constrangedoras. O jornalista, então, adotou o grasnar de um pato para usar quando alguém dizia algo inconveniente no ar.

Em 1995, com a formação da Rede Gaúcha Sat, o programa tornou-se nacional e passou a se chamar Brasil na Madrugada. No mesmo ano, Jayme recebeu a Medalha de Prata no Festival Internacional de Rádio de Nova York, na categoria Melhor História de Interesse Humano, com o trabalho "Memórias de um Menino de Rua", narrando a trajetória do economista Carlos Nelson dos Reis.

Em 2004, deixou o comando do programa, tornando-se comentarista da Rádio Gaúcha até 2007. Depois disso, apresentou o programa "Paredão", na Rádio Pampa e foi colunista do Jornal "O Sul". Copstein trabalhou ainda na Band AM, Jornal do Comércio, Diário de Notícias e foi colunista do site Coletiva.net. Recentemente, tinha um blog, em que publicou o último post em 28 de setembro de 2016.

Como escritor, Jayme teve três livros publicados: "Notas Curiosas da Espécie Humana" (2001), "A Mosca e o Elefante" (2006) e "Ópera dos Vivos" (2008).

O ciclista francês Robert Marchand, que tem 105 anos de idade, quebrou mais um recorde no ciclismo. Isto mesmo, mais um recorde! Em 2012, Robert já tinha quebrado o recorde para ciclistas com mais de 100 anos, com a distância de 26,927 km.

Em 2017, a missão de Robert, quando chegou ao velódromo de Saint-Quentin-en-Yvelines, próximo a Paris, era superar o recorde de distância percorrida em uma hora para ciclistas com mais de 105 anos, criada pela Union Cycliste Internationale (UCI) especialmente para Marchand. Ao final dos 60 minutos, completou 22,547 km de pedalada e estabeleceu a nova marca.

Após a prova, durante entrevista, disse que não se sentia cansado e que promete continuar treinando para tentar superar novas marcas. "Tudo correu bem. Não passei mal por culpa das pernas, mas sim pelos braços, porque tenho reumatismo", afirma Robert.

Mesmo com tudo isto em conta, ele ainda teve do que reclamar. Robert não percebeu que havia entrado no último minuto da hora, senão teria realizado um sprint, para tentar completar uma distância maior.
